Ingredients (10 pieces):
• 200 gr flour
• 4 eggs
• 1 lemon
• 1 bag of vanilla sugar
• 180 gr sugar
• Pinch of salt
• 1 tsp good baking powder
• Griddle
• Baking paper
• Grater

Preparation:
• Preheat oven to 180 degrees. Put the eggs in a bowl and add the vanilla sugar and regular sugar and mix the eggs in 3 to 5 minutes air. Meanwhile, mix the flour with the baking powder and salt. Grate the lemon zest with the flour and scoop through it a few times. Fold the blood mixture through the eggs, do not do this for too long, otherwise the egg cakes will become less airy.
• Make heaps of the batter on the baking tray of about 2 tbsp per egg cake. Keep sufficient distance between the egg cakes. Bake them in the oven for about 10-12 minutes until golden brown. Let them cool before you remove them from the baking tray.
