Oatmeal Cupcakes Recipe
Today I am making oatmeal cupcakes with fruit! These are delicious for breakfast, but also great as a snack with a cup of coffee or a glass of tea! This time I filled them with blueberries, for an extra taste of fruit. And blueberries are not only delicious, but also healthy!

What do you need
100 grams oatmeal
1 tsp baking powder
2 bananas
3 eggs
2 tsp cinnamon
2 tsp vanilla sugar
pinch of salt
150 grams blueberries
10 muffin tins
Preparation
Preheat the oven to 180 degrees Celsius. Put the oats, bananas, eggs, cinnamon, vanilla sugar and pinch of salt in a bowl and mix it all together with a mixer or blender until smooth. Add the blueberries. Using two spoons, or a pancake batter spoon which is very handy in my experience, scoop the batter into the muffin tins. Place them in the middle of the oven and bake for around 30 minutes until cooked. Want to know if they are done? Take a cocktail stick and prick it into a muffin. If the skewer is removed and it is dry, the cupcakes are done! Take them out of the oven and let them cool down.
