Recipe for eggplant oven
A week or a while ago the eggplant was on sale in the Lidl. Two for a very low price. How much do I remember honestly. No matter, because that offer is gone anyway. So it became another challenge to invent something with eggplant. And I managed to do that again. Together with the leeks and orzo or risoni, tomato from canned and harissa it became a delicious casserole. The topping consists of ricotta with egg and cheese. So
