Oatmeal cupcakes with raspberries, yogurt and lime
We're going to Christmas again and what do we put on the table for Christmas? I have chosen something delicious that you can present at Christmas breakfast, Christmas brunch or as Christmas dessert. What do you need
100 grams of oatmeal 1 tsp baking powder 2 bananas 3 eggs 2 tsp cinnamon 2 tsp vanilla sugar pinch of salt 2 boxes of raspberries of 150 grams (150 grams of raspberries go through the batter and from the other box you use 10 raspberries for the decoration of the cupcake) 250 ml of yogurt (for example, greek yogurt) 2 limes 10 muffin molds sachet of fresh mint leaves
Preheat the oven to 180 degrees Celsius. Put the oatmeal, bananas, eggs, cinnamon, vanilla sugar, pinch of salt in a bowl and mix it with a mixer or blender until smooth. Add the raspberries (1 box of 150 grams) and stir them whole through the batter. Spoon with two spoons or a pancake batter is also enormously useful is my experience, the batter in the muffin molds. Put them in the middle of the oven and let them bake for about 30 minutes until cooked. Do you want to know if they're cooked? Grab a cocktail stick and poke it in a muffin. When the stick is taken out and it's dry, the cupcakes are cooked! Remove them from the oven and let them cool down. Put the yogurt in a dish. Wash and scrub the limes and cut 1 lime in half. Hold the lime in the hand and squeeze the lime over the yogurt. Stir with a spoon the lime juice through the yogurt. (usually these are 2 tablespoons of lime juice that comes from 1 lime. You can also add the lime juice step by step and taste how fresh you want the yogurt).
Grate the other lime for decoration.
On the top of each cupcake, pour a tablespoon of yogurt. Finish it with a little lime grater on top of the yogurt. For decoration another raspberry and mint leaf.
