  • 1 lemon
  • 2 shallots
  • 125gr cream fraiche
  • Pair of twigsof thyme
  • 3 zucchini
  • Vegetable bouilion cube
  • 1 piece of garlic
  • 1 tablespoon olive oil
  • 500 ml of boiled water
  • Pepper and salt to taste

  • Finely chop the shallotsand garlic with a knife or in a food processor
  • Heat the olive oil in a thick-bottomed soup pan
  • Let the chopped shallotsand garlic boil for 3 minutes
  • Remove the top and bottom of the zucchini and cut into strips. I first shared them in four, and then again in half.
  • The sliced zucchini add to the glassy shallotsand garlic, on top grate a little of the lemon peel and cook for 4 mintsover low heat
